Théos is born at the bottom of the Umbra Forest, a Unesco World Heritage Site. This fresh white wine, is floral and fruity like the daisies and fruit trees that brush its vines, it is tasty as the red earth that supports the delicate shrubs, it is mineral like the flint that masters in this territory. Théos with balance and passion, tells a story, which comes to life in the beautiful scenery of Vieste, during the procession on May 9, in honor of the mother of all Vieste citizens Santa Maria di Merino. Théos before her eyes, entrusts a bunch of grapes to Don Giovanni, so that he can pass down to the new generations the art of viticulture and the love for his beloved Vieste.

Grapes: Bombino Bianco and Sussumaniello
Terrains: Altitude 150 to 250 m s.l.m; Mediterranean red soil, with the presence of humus, clay and strong presence of flint.
Vineyard: It is in Foresta Umbra a Unesco Patrimony, Cultural Heritage of Humanity. The vines are cultivated in espalier system with guyot method, leaving 6 to 10 buds for plant. Density 1.200 plants, 35 q ( in an hectare with more variety);
Harvesting: Second half of September;
Vinification: Fermentation took place in stainless steel at the temperature of 18°C.
Aging in tanks for two months and at least two months in bottle before release. Analysis Data: alcohol 12,5% ABV, total acidity 7.5 g/l, pH 3.5
Color: Golden yellow as the sun
Food&Wine: Théos is elegant and fresh with its florals notes od daisy and fruity notes such as peach, pear and almond, the flint give it a light sapidity and minerality that accompany the dishes without contrasting them from the sea to the land, it goes well with all the typical dishes of Mediterranean cuisine, such as sea fruits, oily fish, fried fish, backed pasta in white sauce. Serve it in tulip-shaped goblets of medium size.
Théos is excellent at the temperature of 10-12° C.
