Don Giovanni is born at the bottom of the Foresta Umbra, a Unesco World Heritage Site. This intense red wine, represents a great passion passed down to me by my grandfather. The tannic and roasted notes remind his strength, meanwhile the rich floral notes and the fruits of the undergrowth recall the past. As a child, I sipped water from a grey bucket attached to the bow of a beautiful white well, I still remember the scents. My grandmother not far away, was doing her housework near a white stone farmhouse. Suddenly, I put the bucket down and saw my grandfather and his brown mule at the foot of a hill, where a beautiful green vineyard extended, with big colored clusters. I think, that was the first time I saw heaven.

Grapes: Malvasia Nera and Nero di Troia
Terrains: Altitude 150 to 250 m s.l.m; Mediterranean red soil, with the presence of humus, clay and strong presence of flint.
Vineyard: It is in Foresta Umbra a Unesco Patrimony, Cultural Heritage of Humanity. The vines are cultivated in espalier system with guyot method, leaving 6 to 10 buds for plant. Density 670 plants, 20 q ( in an hectare with more variety);
Harvesting: at the end of September;
Vinification: Maceration on the skins 24 days. Fermentation took place in stainless steel at the temperature of 18°C. Passage in barrique. Aging in tanks for two months and at least two months in bottle before release.
Analysis Data: alcohol 13,5% ABV, total acidity 6.5 g/l, pH 3.5
Color: Purple red with violet reflections, it remember the wine of a time.
Food&Wine: Don Giovanni is a fragrant bouquet with intense flowery notes of violets and roses combined with scent of fresh red fruit such us blackberries and raspberries, the flint give it a light sapidity and minerality that accompany the dishes without contrasting them from the sea to the land, it goes well with all the typical dishes of Mediterranean cuisine, such as ragù of meat, salumi and cheese, tagliata of meat; under 18° you can serve it also with soup fish, roasted fish, sushi of tuna, and dark chocolate.
Serve it in tulip-shaped goblets of medium size.
Don Giovanni is excellent at the temperature of 16-18° C.
